Dizy straddles the northern flank of Épernay, across the canal from the city, on south-facing slopes split unusually evenly between Pinot Noir, Chardonnay, and Pinot Meunier. The village is the home of Jacquesson, a small house founded in 1798 and based in Dizy since 1974, that more or less single-handedly redefined modern Champagne with two innovations: the numbered cuvée, where each year's non-vintage release is given a unique number rather than presented as an interchangeable house style, and the parcel-specific bottling, where individual sites are vinified and labelled separately. Cuvée 728, released in 2000, was the first numbered release and remains the reference point for the modern style. Bollinger, Moët, Roederer, and Perrier-Jouët also source from Dizy's parcels.
